In the 21st century, the problem of obesity, metabolic syndrome and other chronic diseases, such as, cardiovascular disease, stroke, diabetes, cancers, immune disorder, and chronic respiratory disease are one of the leading preventable causes of death. An unhealthy diet is considered as one of the main factors responsible for the above mentioned diseases. Thus, changing eating habits and leading active lifestyle is a new strategy for prevention and treatment of the said conditions. Furthermore, foods rich in potentially bioactive compounds can be used to successfully fight with the diseases. Recent years brought significant development in molecular biotechnology, which enables to create bioactive food components. Additionally, due to their physiological and physicochemical universality, they are regarded as promising health-promoting alternatives for development of new functional foods.
